The cornerstone seasoning in Ethiopian and Eritrean recipes, Berbere is distinct and extremely flavourful. This blend is traditionally used in ‘Wats’ (stews) with meat, vegetables or lentils

Ginger, garlic, green chillies, rosemary and freshly ground spices (allergens in bold)

You’ll also need…

3 onion, 1 medium tomato, half a can of tinned tomatoes, 500g beef skirt (or for a veggie suggestion 100g runner beans, 100g red pepper, 100g garden peas and 200g carrots)

Things you may already have…

3 tbsp vegetable oil, 1 tsp butter (or margarine if you prefer), 1 tsp salt (optional)
